Dry White Blend

A blend of Semillon (60%), Chardonnay (30%) and Sauvignon Blanc (10%) all from the Mt Jagged vineyard on the Southern Fleurieu.

Cellaring: will reward 1-2 years but really is a drink now wine.

Viticulture: 2008 was a dry warm vintage with the vineyard producing around the desired 2-2.2 tonnes per acre. The whites are ripened well while retaining good acidity.

Vinification: The three parcels were fermented separately in tank at initially cooler ferment temperatures that were gradually increased as ferment progressed. The parcels were then blended and bottled quickly to retain fruit freshness.
